Granola Breakfast Cups

After searching for new breakfast ideas which we can prep on a weekend and enjoy without taking to much effort on a morning (I am quite a monster before I eat) we tried granola cups! I usually put vanilla yogurt and a selection of fruit that are in the fruit bowl and almond; Luiz on the other hand goes for Greek yogurt

Granola Cup Recipe

(based on 12 muffin cases)

  • 4 tbs butter

  • 1/4 cup honey

  • 1/4 cup molasses

  • 2 tbs brown sugar 

  • 1 tsp cinnamon 

  • 1/2 tsp ginger

  • 1/4 tsp cloves

  • 1/4 tsp salt

  • 1 tsp vanilla

  • 2 & 1/2 cups oats

  • 1/4 cup flax seeds

  • 1/4 cup sliced almonds

  • 1/4 cup raisins 

  1. In a small pan add the butter, honey, molasses, brown sugar, cinnamon, ginger, cloves & salt

  2. Heat the mixture until butter has fully melted

  3. Remove from heat & add the vanilla

  4. In a bowl mix oats, flax seeds, almonds & raisins 

  5. Pour the melted butter mixture into the dry ingredients & combine

  6. Cover the bowl and then place it into the fridge for 30 minutes

  7. While the oats are in the fridge you can grease up a muffin tray and then once its cooled fill each muffin case 2/3 full

  8. Using your fingers press in the centre to create a hole (this gets sticky so you just have to clean and dry your hands before starting again)

  9. Place in the oven for 15 minutes (gas mark 5)

  10. Remove, cool & store until you need a scrumptious snack/breakfast
