Nin's Lemon Cake Recipe

Everyone has that one recipe which they’ve nurtured and loved so much it doesn’t even need a recipe anymore, for me it’s lemon cake. It is well loved in the family even mentioning to the dog is dangerous! I I thought I’d share it and spread the love and zestiness around. It’s great for laying birthday cakes but can be used alone for party treats!

(based on three 9 inch cakes)

  • 3 cups plain flour

  • 2 1/2 cups white sugar

  • 1 tbs baking powder

  • 1 tsp salt

  • 1 1/2 cups unsalted butter (cubes)

  • 1 cup whole milk / oaty milk

  • 5 large eggs

  • 4 tsp lemon zest 

  • 3 tbs freshly squeezed lemon juice

  • 1 tsp vanilla extract

  1. Start by measuring out all ingredients and preheating the oven to 350 degrees. I grease three 9 inch tins with butter and silicone

  2. In bowl A mix the flour, sugar, baking powder and salt

  3. Then add the butter and 3/4 cup of milk to bowl A and mix together on a low speed, once it is mixed in increase the speed for 2 minutes to create a light & fluffy texture

  4. In a separate bowl beat the remaining 1/4 cup of milk, eggs, vanilla, lemon zest & juice

  5. Slowly combine the wet mixture (bowl B) into bowl A and mix well

  6. Divide the batter and bake for 30 minutes or until a toothpick comes out clean

The next stages are very much your own choice. Sometimes I create a lemon syrup and cover the cooled cake to increase the lemoniness or alternatively I sprinkle some icing sugar on and serve in small squares I love pasta; so trying out new recipes is always a joy but this one is the perfect one for us as it can be prepped (mostly beforehand) and is a quick tasty meal at the end of the day.
