Healthy & Zero Waste Cookies!
While I was thinking for snacks for Luiz to have during his iodine free diet I came across these delicious bites! Now we use most of our peanut butter making these. They are great with a cup of iced coffee or as a snack mid day; once I eat one I need to eat all of them so do be warned these are dangerous.)
It is an easy, quick recipe and we have managed to buy all the products as close to zero waste as possible by shopping at “The Jar Tree“ in Leeds and “Keelham Farmshop“
Peanut Butter Cookies
(based on 20 servings)
1 banana mashed
1/2 cup peanut butter (we Meridian Natural)
1/2 cup honey
1 tsp vanilla extract
1 cup oats
1/2 cup plain flour
1 tsp cinnamon
1/4 tsp salt
1/4 tsp baking soda
1 large egg white
Preheat the oven at 350 degrees (Gas Mark 4)
Whisk in the banana (mashed), peanut butter, honey and vanilla
In a separate bowl whip up the egg whites until foamy
In a different bowl mix together the dry ingredients (oats, flour, cinnamon, salt and baking powder)
Add the dry mixture into the wet mixture and then stir in the egg whites
We then spoon the mixture into a piping bag and drop small rounds onto the silicon mats
Flatten each cookie with clean fingers until you have approx. 2 inch circles
Bake the cookies for 14 minutes for a softer texture or 16 minutes for a crispy outer edge!
